Chef Spotlight: Giles Conroy, Group Executive Chef at Oakland Care

At Oakland Care, we take immense pride in our Head Chefs and today, we shine the spotlight on our Group Executive Chef, Giles Conroy, with a wealth of experience and a genuine passion for transforming catering in care. Giles plays a pivotal role in ensuring our residents enjoy memorable dining experiences.

Giles has been with Oakland Care for nearly three years now. Before joining us, he was the Head of Dining Services for Sunrise Senior Living and Gracewell Healthcare. His extensive background includes roles as Executive Chef and Head Chef in prestigious establishments, including Hilton Hotels worldwide and acclaimed rosette restaurants across Europe and the UK.

Giles started his career in a small 2-rosette French kitchen, and that journey quickly led him to Hilton Hotels, where he had the opportunity to work his way up through various ranks and travel to stunning destinations worldwide. His dedication to the craft required hard work and total commitment, shaping him into the passionate chef he is today.

Giles’s transition to the care industry was driven by a desire to change care catering. “I wanted to change the outlook of care catering and lead, mentor, and drive passion and creativity in delivering great food and experiences to our residents,” he explains. This vision aligns perfectly with Oakland Care’s mission to provide nutritious meals and a strong sense of community and enjoyment.

Giles joined Oakland Care due to its exceptional team and strong values. “The great people that work here and the company’s commitment to sustainability resonated with me,” he shares. His focus on collaboration helps encourage an environment where culinary creativity thrives.

Outside of his professional pursuits, Giles finds joy in spending time with his family, particularly his daughter India, whose birth is the most memorable experience of his life. He also enjoys various hobbies, including salmon and carp fishing, shooting, car restoration, and, of course, cooking.

“I’m dedicated to my profession and strive to remain humble,” he emphasises when discussing his major life achievements. Alongside his passion for cooking, he treasures the role of being a father and husband.

If Giles were an animal, he’d choose to be a fox, reflecting cleverness and adaptability. His favourite colour? Camo for stealth! As for biscuits, nothing can beat the classic McVitie’s Gold Bar. And when it comes to pizza, he is firmly against pineapple. For entertainment, Giles enjoys the high-flying excitement of Top Gun –  Maverick.

As we look toward the future, Giles is committed to continuing his growth with Oakland Care. “My plans for the next three years include supporting the best care catering experience platform possible,” he states firmly.
